Amaretto Peach Chutney

Amaretto Peach Chutney

2 cups peeled fresh peaches, not too rip

1/4 cup julienne onion
2 tablespoons finely minced fresh ginger

1/2 cup finely diced red bell pepper

1/2 cup light brown sugar

1/2 cup white sugar

2 tablespoons cider vinegar
1/4 cup amaretto liqueuer

Place all of the ingredients in a heavy-bottomed saucepan over medium heat and stir well to combine. Bring to a boil, stirring, and simmer for 30 minutes until the chutney begins to thicken slightly and is syrupy. Remove the pan from the heat and let cool.
